2 medium-sized beets, roasted and peeled
1/2 cup tahini
2 cloves garlic, minced
1/4 cup fresh lemon juice
2 tbsp olive oil
1/2 tbsp RK Cumin Powder
RK Salt and pepper to taste
Water (as needed for consistency)
Fresh parsley for garnish
Directions
To roast the beets, preheat the oven to 400°F (200°C). Wrap the beets in foil and roast for about 45-60 minutes or until tender. Let them cool, then peel and chop.
In a food processor, combine the roasted beets, tahini, minced garlic, fresh lemon juice, olive oil, ground cumin, salt, and pepper.
Blend until smooth. If the dip is too thick, add water gradually until you reach your desired consistency.
Taste the dip and adjust the seasoning if needed. You can add more lemon juice, salt, or pepper according to your preference.
For enhanced flavors, refrigerate the dip for at least an hour before serving.
Transfer the dip to a serving bowl. Drizzle with a bit of olive oil and garnish with fresh parsley.
