Main Ingredients
1 cup of RK Chickpeas
½ cup of RK Black Eye Beans
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
2 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon RK Cumin Powder
RK Salt and pepper, to taste
Directions
1. Place white chickpeas and black eye beans in a separate bowl and cover with water. Soak overnight or for at least 6 hours. Drain the soaked white chickpeas and black eye beans before using.
2. In a large bowl, combine the chickpeas, black beans, cherry tomatoes, cucumber, red onion, parsley, and mint.
3. In a small bowl, whisk together the extra-virgin olive oil, lemon juice, minced garlic, ground cumin, salt, and pepper to make the dressing.
4. Pour the dressing over the salad ingredients in the large bowl and toss gently to combine, ensuring all ingredients are well coated.
5. Taste and adjust the seasoning, adding more salt, pepper, or lemon juice as desired.
6. Let the Balela Salad sit for about 10-15 minutes to allow the flavors to meld together.
7. Serve the salad chilled or at room temperature.
