1.5 pounds boneless, skinless chicken thighs or chicken breast

1/4 cup olive oil

2 tablespoons lemon juice

4 cloves garlic, minced

1 teaspoon RK Cumin Powder

1 teaspoon RK Paprika Powder

1 teaspoon of RK Chicken Masala

1 teaspoon RK Coriander Powder

1/2 teaspoon RK Turmeric Powder

1/2 teaspoon RK Cinnamon Powder

1/2 teaspoon RK Salt

1/4 teaspoon RK Black Pepper

Pita bread or flatbread, for serving

Toppings: sliced tomatoes, cucumbers, onions, lettuce

Directions

1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, cumin powder, paprika powder, coriander powder, chicken powder, turmeric powder, cinnamon powder, salt, and black pepper powder.

2. Cut the chicken into thin strips or bite-sized pieces. Place the chicken in the marinade and toss to coat evenly. Cover the bowl and refrigerate for 2-4 hours (or overnight) to allow the flavors to develop.

3. Preheat your grill or oven to medium-high heat.

4. If using a grill, thread the marinated chicken onto skewers. If using an oven, spread the chicken in a single layer on a baking sheet lined with parchment paper.

5. Grill the chicken skewers or roast the chicken in the oven for 25-30 minutes, or until the chicken is cooked through and slightly charred on the edges.

6. Remove the cooked chicken from the grill or oven and let it rest for a few minutes.

7. Warm the pita bread or flatbread.

8. Assemble the Chicken Shawarma by placing a generous amount of cooked chicken on the bread, and adding your desired toppings such as sliced tomatoes, cucumbers, onions, and lettuce.

9. Drizzle with your choice of sauce, such as tahini sauce, garlic sauce, or yogurt sauce, roll up the bread to enclose the filling and serve the Chicken Shawarma immediately.
