Main Ingredients
1 ½ cups of RK White Chickpeas
3 tablespoons tahini
2 tablespoons lemon juice (adjust to taste)
2 cloves garlic, minced
2 tablespoons olive oil (plus extra for drizzling)
1. Soak white chickpeas overnight and cook until tender. Drain and cool before using.
2. In a food processor or blender, combine the chickpeas, tahini, lemon juice, minced garlic, olive oil, ground cumin, and a pinch of salt.
3. Blend the ingredients until smooth and creamy. If the mixture is too thick, gradually add water, a tablespoon at a time, until you reach your desired consistency.
4. Taste and adjust the seasoning by adding more lemon juice or salt if needed.
5. Transfer the hummus to a serving bowl and drizzle with olive oil.
6. Sprinkle with paprika, chopped parsley, or sesame seeds for garnish.
7. Serve the hummus with warm pita bread, fresh vegetables, or use it as a spread in sandwiches and wraps.
