Jarjeer (Rocca) Salad

Indulge in the refreshing flavors of the Middle East with Jarjeer Salad, also known as Rocca Salad. This vibrant salad features fresh arugula leaves, cherry tomatoes, and a zesty lemon-tahini dressing.

Main Ingredients

4 cups fresh arugula (jarjeer) leaves

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup pine nuts, toasted

1/4 cup pomegranate seeds (optional)

3 tbsp tahini

Juice of 1 lemon

2 tbsp olive oil

1 clove garlic, minced

RK Salt and pepper to taste


In a large bowl, combine fresh arugula, cherry tomatoes, sliced red onion, toasted pine nuts, and pomegranate seeds.

To make the lemon-tahini dressing, in a small bowl, whisk together tahini, lemon juice, olive oil, minced garlic, salt, and pepper until well combined.

To assemble the salad, drizzle the lemon-tahini dressing over the salad.

Toss the salad gently to ensure all ingredients are coated with the dressing and it is ready to be served.
