Masoor Whole Stew

Main Ingredients

1 cup RK Masoor Whole, soaked for 1 hour

1 onion, finely chopped

2 tomatoes, chopped

2 carrots, diced

1 potato, diced

1 bell pepper, diced

3 cloves of garlic, minced

1-inch piece of ginger, grated

2 teaspoons RK Cumin Seeds

1 teaspoon RK Turmeric Powder

1 teaspoon RK Coriander Powder

1 teaspoon RK Garam Masala

RK Salt to taste

Fresh cilantro leaves for garnish

Water for cooking

Oil for sautéing

Directions

1. Heat oil in a large pot or pressure cooker over medium heat. Add cumin seeds and let them splutter.

2. Add chopped onions and sauté until they turn golden brown.

3. Add minced garlic and grated ginger. Sauté for a minute until the raw smell disappears.

4. Add chopped tomatoes and cook until they turn soft and mushy.

5. Add turmeric powder, coriander powder, and garam masala. Stir well to combine the spices with the onion-tomato mixture.

6. Drain the soaked Masoor Whole and add them to the pot. Mix well.

7. Add diced carrots, potatoes, and bell peppers. Season with salt.

8. Pour enough water to cover the lentils and vegetables.

9. If using a pressure cooker, cover the cooker and cook for about 15-20 minutes on medium heat or until the lentils are cooked and vegetables are tender. If using a regular pot, cover with a lid and simmer for about 35-40 minutes or until everything is cooked.

10. Once cooked, check the seasoning and adjust if needed.

11. Serve the Masoor Whole Stew hot, garnished with fresh cilantro leaves and enjoy with steamed rice or bread.
